Almond-Crusted Chicken Breasts

This easy and flavorful recipe can also be made ahead for pack-and-go lunches. Slice cold chicken diagonally and serve on top of salad greens.

Ingredients
- 1/2 cup roasted, unsalted almonds
- 1 garlic clove
- 1/2 teaspoon of coarse salt
- 3 tablespoons extra-virgin olive oil
- 2 boneless, skinless chicken breasts
- Coarse black pepper

Step 1
Preheat oven to 425-degrees.
Make a coarse paste of the almonds, garlic, salt, and olive oil in a food processor.
Season chicken breasts with pepper, then rub paste onto chicken. Place chicken into a shallow baking pan, and roast in oven until cooked through, 15 to 18 minutes.
Slice and serve alongside a mixed greens salad, baby spinach or lightly sautéed greens.
