Ingredients

  • RECIPE: Canned soup is loaded with preservatives, MSG, and not made with love, like you can do!! How about some home made "Pasta Fagioli" like I grew up with! Here is a recipe I love.
  • 2 cans Organic Pinto Beans (I like Eden brand best) ...Drained
  • 1 can Organic Cannellini beans Drained
  • 1 medium onion, diced
  • 1 carrot, diced
  • 3 cloves garlic, minced
  • 3 Tbsp Extra Virgin Olive Oil
  • 1 large can of organic whole tomatoes in juice(I like Muir Glen)
  • 3 cups veggie broth
  • 1 cup tomato puree
  • 1 tsp dried basil
  • 1 cup organic brown rice pasta of choice (like elbows)
  • 1/4 cup fresh parsley, minced
  • 2 cups organic baby spinach
  • 1 tsp sea salt
  • fresh ground pepper

Preparation

Step 1

Simply sauté onion, carrot, basil, and garlic with olive oil until fragrant. Add beans and spinach and cook for a few minutes. Add salt and pepper. Toss in Tomatoes (with juice) and the puree, and broth. Bring to a boil and cook on medium covered for about 20 minutes. Add pasta and cook until tender. Serve with parsley and grated romano or parmesan, with a drizzle of olive oil
