Jelly Roll

Ingredients

  • 4 egg yolks
  • 1/4 c sugar
  • 1/2 tsp vanilla
  • 4 egg whites
  • 1/2 c sugar
  • 2/3 c cake flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Lemon Filling
  • 3/4 c sugar
  • 2 tbsp corn starch
  • 1 tbsp lemon rind
  • 1/8 t salt
  • 1/3 c lemon juice
  • 3/4 c water
  • 1 egg beaten
  • 1 tbsp butter

Preparation

Step 1

Beat yolks thick. Add 1/4 c sugar and vanilla. Beat whites to soft peaks add 1/4 sugar and beat stiff. Fold yolks into whites. Sift dry ingredients into mixture. Spread on wax paper lined jelly roll pan.

Bake 375 for 10-12 minutes Remove paper and roll on sugared towel.

Filling

Mix sugar, corn starch,water, egg and butter. Blend, cook in double boiler till thick. Stir constantly. Cool thoroughly 2 or more hours.
