Fresh Tomatillo Salsa for Two

This recipe is very quick to prepare.
It works well as as an appetier served with chips, as a quick sauce over pan-seared or grilled fish, and as a side for eggs, quesadillas or anything you can come up with.

- 1/2 lb. tomatillos, washed and quartered
- 1/4 cup red onion, chopped
- 1 red jalapeno chile, coarsely chopped
- 1/4 cup fresh cilantro
- 1 lime, juiced (about 1 1/2 tablespoons)
- Coarse salt
- Black pepper

Step 1
In a food processor, combine tomatillos, onion, jalapeno, and cilantro with lime juice. Pulse until finely chopped; season with salt and black pepper to taste.
