Souvlakia- Chunks of lamb marinated in lemon juice, olive oil, oregano and garlic, then grilled on skewers. Goes well with a greek salad.

Ingredients
- Shopping list for lamb kebabs and greek salad:
- 1/2 1/2 1-1/2 Lb lamb cut into 1-1/2 cubes
- 1/4 1/4 1/4 cup fresh lemon juice
- 2 2 2 teaspoons olive oil
- 2 2 2 teaspoons dried oregano
- 2 2 cloves 2 medium cloves garlic crushed
- 1 1 1 medium green pepper
- 1/4 1/4 1/4 medium onion
- 2 2 2 whole wheat pitas, warmed

Step 1
Mix lemon juice, oil, oregano and garlic together. Add in lamb and marinate for 15 minutes, turning once during this time. Wash and seed green pepper. Cut into 2" cubes. Slice onion into 1" pieces. Remove lamb from marinade and thread on skewers alternating with peppers and onions. Grill. Serve with pita. Makes 2 servings
