Souvlakia- Chunks of lamb marinated in lemon juice, olive oil, oregano and garlic, then grilled on skewers. Goes well with a greek salad.

Ingredients

    Lb lamb cut into 1-½ cubes

  • ¼

    cup fresh lemon juice

  • 2

    teaspoons olive oil

  • 2

    teaspoons dried oregano

  • 2

    medium cloves garlic crushed

  • 1

    medium green pepper

  • ¼

    medium onion

  • 2

    whole wheat pitas, warmed

  • Shopping list for lamb kebabs and greek salad:

    medium onion, garlic, 2 medium lemons, 1 medium green pepper, 1 head romaine lettuce, 1 medium cucumber, 1 tomato, 1/2LB lamb cut for kebabs, 1 small package of feta cheese, 1 jar dried oregano, 1 small package whole wheat pita bread, 1 small can chickpeas, 1 small can black pitted olives and 1 bottle of oil and vinegar.

Directions

Mix lemon juice, oil, oregano and garlic together. Add in lamb and marinate for 15 minutes, turning once during this time. Wash and seed green pepper. Cut into 2" cubes. Slice onion into 1" pieces. Remove lamb from marinade and thread on skewers alternating with peppers and onions. Grill. Serve with pita. Makes 2 servings Per serving: 391 calories, 12.4g fat, 72mg cholesterol, 30g protein, 42.5g carbohydrates, 6.3g fiber, 359mg sodium
