PECAN RICE SALAD

Ingredients

  • 2 cups brown rice
  • 4 cups simmering water
  • 1 cup chopped green beans
  • 1 cup chopped mixed herbs
  • 1 cup salted roasted pecans, chopped
  • 1/3 cup olive oil
  • Juice of 1 lemon
  • Salt and pepper, to taste

Preparation

Step 1

Cook rice in simmering water, covered, for 45 to 50 minutes. Add green beans, during the last 5 minutes. Let cool. Toss with rest of ingredients.
