Squash Casserole

Ingredients
- 1/3 cup of unsalted butter, softened
- 3/4 cup white sugar
- 2 eggs
- 2/3 cup of heavy whipping cream
- 1 tsp. of vanilla
- 3-4 cups of butternut and acorn squash

Preparation
Step 1
1. Peel and seed squash.
2. Cut into cubes, place in a pan of water and bring to a boil. Boil
until easily mashed.
3. Drain squash and then mash. Set aside.
4. In mixing bowl, cream butter and sugar.
5. Beat in eggs, cream and vanilla.
6. Stir in squash (mixture will be thin).
7. Pour into greased casserole dish.
8. Combine 1/2 cup of brown sugar and 2 TBL of butter; sprinkle over
top.
9. Bake uncovered 45 minutes at 350 degrees.
