Greek Salad. Goes good with lamb

Ingredients

  • 5 large romaine lettuce leaves
  • 1 medium cucumber , peeled and sliced
  • 1 tomato, cut into eighths
  • 1/2 cup canned, rinsed and drained chickpeas
  • 6 black olives, pitted
  • 2 tablespoons crumbled feta cheese
  • 1/2 teaspoon dried oregano
  • 1-1/2 tablespoons oil and vinegar

Preparation

Step 1

Wash lettuce and tear into bite size pieces. Toss with cucumber, tomato, chickpeas and olives. Crumble feta cheese on top. Sprinkle oregano and dressing over salad. Toss well.
Makes 2 servings.

1 medium onion, garlic, 2 medium lemons, 1 medium green pepper, 1 head romaine lettuce, 1 medium cucumber, 1 tomato, 1/2LB lamb cut for kebabs, 1 small package of feta cheese, 1 jar dried oregano, 1 small package whole wheat pita bread, 1 small can chickpeas, 1 small can black pitted olives and 1 bottle of oil and vinegar.
