Creamed Mushrooms

Ingredients

  • 4 tablespoons unsalted butter (divided)
  • 3 tablespoons all-purpose flour
  • 2 cups milk (hot)
  • 1 tablespoon sherry
  • 1 pinch ground nutmeg
  • 1 pound mushrooms
  • salt & freshly ground white pepper (to taste)

Preparation

Step 1

In a saucepan, add the butter and place over medium heat. Once melted, add the flour, and cook stirring frequently for about 2 minutes.
Remove the pan from heat. When the bubbling stops, slowly add the hot milk whisking constantly. Bring to a boil, then reduce heat to a simmer. Continue to cook, whisking constantly, for 2 minutes. Add the sherry, nutmeg, and season to taste with salt and pepper.
Meanwhile, in a large sauté pan, add butter and place over medium-high heat. Add mushrooms, and cook until tender about 5-7 minutes. Serve with the sauce.
