Ingredients

  • Glaze:
  • 1/4 c. butter
  • 1 c. sugar
  • 2 eggs
  • 1 1/2 c. zucchini, grated
  • 1/3 c. plain non-fat Greek yogurt
  • 1 tsp. malibu coconut rum
  • 1 tsp. vanilla
  • 2/3 c. coconut
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 2 c. flour
  • 3 c. powdered sugar
  • 1 tsp. vanilla
  • 1 tsp. malibu coconut rum
  • 3 T. lime juice

Preparation

Step 1

Heat oven to 350°. Grease loaf pan. Cream butter & sugar; add eggs one at a time. Add zucchini, yogurt, vanilla & rum. Beat well. Stir in coconut & dry ingredients til just blended. DO NOT OVERMIX. Spoon into prepared pan. Bake 1 hour or til tests done. Cool in pan 10 minutes or so, then place on plate. Drizzle top with glaze. Top with toasted coconut.
