Slow Cooker Corned Beef/Cabbage

Ingredients
- (makes 4-6 servings)
- 1 medium onion, cut into wedges
- 4 large red potatoes, quatered
- 1 lb. baby carrots
- 6 celery stalks, cut into three inch pieces
- 3 garlic cloves, minced
- 1 bay leaf (can use 6 sprigs of thyme instead)
- 3 cups of water
- 2 tbsp. sugar
- 2 tbsp. cider vinegar
- 1/2 tsp. pepper
- 2 &1/2 to 3 lb. corned beef brisket, with spice packet
- 1 small head of cabbage, cut into wedges

Preparation
Step 1
1. Place the onion, potatoes and carrots in a 5 quart slow cooker.
2. Combine the water, garlic, bay leaf, sugar, vinegar, pepper and spice packet and pour over the vegetables.
3. Top with brisket and cabbage.
4. Cover and cook on low for 8-9 hours, until ingredients are tender.
5. Discard bay leaf before serving.
