Broiled Salmon and Figs

  • 2 2 2 Tbsp grated lemon zest
  • 1 1 1 cup pomegranate syrup
  • 1/2 1/2 1/2 cup extra virgin olive oil
  • 1 1 1 Tbsp favorite hot sauce
  • 1 1 1 Tbsp minced garlic
  • 2 2 2 tsp ground cumin
  • 1/3 1/3 1/3 cup chopped cilantro sprigs
  • 1/3 1/3 1/3 cup chopped fresh mint
  • 2 6 2 6 6 ounce salmon fillets (skinned, pin bones removes) or steaks
  • 12 12 12 ripe figs, quartered

Step 1

In a bowl, combine the lemon zest, pomegranate syrup, olive oil, hot sauce, garlic, cumic, cilantro, and mint and stir well. (The marinade can be covered and refrigerated for up to 8 hours before serving.)
Position an oven rack 4 inches from the heating element. Line a baking sheet with aluminum foil. Place the salmon flat side down on the baking sheet and coat on all sides with one-third of the marinade. Scatter the figs around the fish and drizzle with half of the remaining marinade. Turn the oven to broil.
Immediately place the salmon in the oven and cook for about 5 minutes, until the fish and sauce begin to carmelize. Turn the oven to bake at 300 degrees fahrenheit. Drizzle the remaining marinade over the figs and cook for about five minutes, until the fish flakes when prodded with a fork. Transfer to dinner plates and serve at once.
