Sage & Garlic rubbed Cornish Hens

Ingredients
- 6 garlic cloves
- 1 tbl sugar
- 1 tsp kosher salt
- 12 fresh sage leaves
- 1 tbl grated lemon rind
- 2 tbl olive oil
- 2 cornish hens 2 2/3 lbs total
- 2 lemons halved and seeded

Preparation
Step 1
Preheat oven to 425 degrees
Place a wire rack in a roasting pan
smash garlic cloves and grind to a fine paste with the sugar and salt
combine garlic mixture with sage, rind and oil
Pat hens dry and rub mixture on
Roast at 425 for 30 minutes or until thermometer reads 160 degrees
Remove hens, let stand 5 minutes, split at breast and serve with lemon
