Granola bars

By

Ingredients

  • 4 c old fashioned oats
  • 1/4 c whole wheat flour
  • 1/2 tsp salt
  • 1 c mixed dried fruit (raisins, craisins), mini chocolate chips - whatever combination you want
  • 1/2 c pecans - I have been leaving out due to expense and just using crunchy peanut butter; could put in sunflower seeds or anything similar.
  • Flax seed and/or quinoa
  • Cinnamon
  • 1/2 c peanut butter - I heat briefly in microwave to make it more liquid so it mixes well.
  • 1/2 c oil - I use canola
  • 1/2 honey - I use less to cut down on carbohydrates
  • 1 tsp vanilla

Preparation

Step 1

Mix dry ingredients and wet separately. Mix all together.
Lightly grease or spray with cooking spray a 9x13x2 pyrex dish and press mixture into it. Bake at 325° until it seems done. Recipe says 40 minutes. I don’t go that long. Also I find the edges brown much faster, so I’ve started putting foil strips around edges - I just save the four strips and reuse them each week when I make a new batch. Goal is to have them hang together when you cut it into squares. Whatever crumbles into smaller pieces is also good thrown into yogurt or just scooped up and eaten.
