Comforting Potato Casserole

Ingredients

  • 2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
  • 2 cups (16 ounces) sour cream
  • 2 cups cooked and drained cauliflower pureed in food processor
  • 2 cups (8 ounces) shredded Galbani® Part Skim Mozzarella Cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 shake or more cayenne pepper
  • 5 green onions, sliced
  • 1 package (32 ounces) frozen cubed hash brown potatoes, thawed

Preparation

Step 1

In a large bowl, combine the soup, sour cream, seasonings,cauliflower, cheese and onions; add in potatoes; toss to coat.

Transfer to a greased 2-1/2-qt. baking dish. Bake, uncovered, at 350° for 1-1/2 hours or until potatoes are tender.
