Grilled Corn Salad

Ingredients

  • 4 ears fresh corn, cleaned
  • 1/4 C oil
  • 1/2 red or green bell pepper finely chopped
  • 2 Scallions finely chopped
  • 3 T chopped cilantro or parsley
  • 3 T lime juice
  • 3 T maple syrup
  • 1/2 t salt
  • 1/4 t freshly ground blk pepper

Preparation

Step 1

rub corn with 2 T oil, grill 7 mins or when it is lightly brown on all sides, cut kernels from cob, and put in bowl. add peppers, onions, and cilantro.
mix 2 T oil w lime juice, syrup, salt, and pepper. toss w corn salad. serve room temp

can be made 2 days ahead and refrigerated
