Roasted Chicken, Potatoes and Sausage

ROASTED CHICKEN & SAUSAGES
Preheat oven to 425*. Spray a large roasting pan with vegetable spray. Slice potatoes (I use about 6 to 8) into disks, and layer them into the pan to cover the bottom. Arrange your chicken pieces over the potatoes (I prefer whole chicken pieces with skin). Cut Italian sausages in half (I use 6 to 8 sausages) and distribute them around the chicken. Generously season all over with garlic salt, pepper, oregano, paprika, and drizzle between 1/3
and 1/2 cup of olive oil over all (use more if you need too). Cover with foil tightly, and bake one hour. Remove foil, turn heat down to 375*, baste chicken and sausages with pan juices, and bake, uncovered, another 30 minutes. The meats are all roasted beautifully, and the potatoes soak up wonderful flavor from the chicken, sausage and spices. Serve with a loaf of crusty bread to help soak up those wonderful juices!
Note: If you prefer using skinned, and/or boned chicken pieces, adjust baking time and baste frequently, or the meat will dry out a bit. Tonight, I sprinkled green pepper and onion chunks all over for even more flavor. Everything works in this dish...experiment!
