This is from the book "Grilling for Dummies" LOL - Once you get past the title the series really *speaks to me....
Have made this twice now and it is the BEST!

Lemon Chicken Breasts

8 boneless, skinless chicken breasts
½ cup extra-virgin Olive oil
½ cup fresh lemon juice
grated peel of one lemon
2 large cloves garlic, peeled and minced
2 teaspoons dried oregano
1 teaspoon salt
½ teaspoon pepper

Rinse breasts under running water and pat dry with paper towels.
Place breasts in a large resealable plastic bag.
In a small bowl combine the remaining ingredients and then pour over the chicken. Seal the bag, pressing out any air; refrigerate for 2 to 6 hours, turning occasionally to coat in the marinade.
Prepare a med-hot fire on grill.
Remove breasts from marinade, discarding marinade.
Place chicken on well-oiled grid for 10 to 12 minutes or until done; turning every 4-5 minutes.
