Fresh Vegetable Quinoa Bowl 0 Picture


  • 1 medium red bell pepper
  • 2 1/2 cups chicken stock
  • 1 1/2 cups uncooked quinoa rinsed and drained
  • 1 tbl olive oil
  • 1 tbl chopped thyme leaves
  • 1/2 tsp kosher salt
  • 1/2 medium red onion chopped
  • 1 large zucchini chopped
  • 1 6 ounce baby spinach
  • 1 roaster chicken cooked and cut



Step 1

Bring chicken stock to a boil. Add Quinoa, cover reduce heat and simmer 15 minutes until liquid absorbed.
Heat a large skillet over medium high heat. Add oil and swirl. Add thyme leaves, salt, bell pepper and chopped onion. saute 3 minutes. Add zucchini and saute 2 minutes. Add chicken and spinach, cover, cook 2 minutes. top quinoa with chicken vegtable mixture.
