Ingredients
- 1 medium red bell pepper
- 2 1/2 cups chicken stock
- 1 1/2 cups uncooked quinoa rinsed and drained
- 1 tbl olive oil
- 1 tbl chopped thyme leaves
- 1/2 tsp kosher salt
- 1/2 medium red onion chopped
- 1 large zucchini chopped
- 1 6 ounce baby spinach
- 1 roaster chicken cooked and cut

Preparation
Step 1
Bring chicken stock to a boil. Add Quinoa, cover reduce heat and simmer 15 minutes until liquid absorbed.
Heat a large skillet over medium high heat. Add oil and swirl. Add thyme leaves, salt, bell pepper and chopped onion. saute 3 minutes. Add zucchini and saute 2 minutes. Add chicken and spinach, cover, cook 2 minutes. top quinoa with chicken vegtable mixture.
