- Cooking spray
- 1-1/2 c semisweet chocolate chips
- 1 stick unsalted butter
- 3/4 c packed light brown sugar
- 3/4 c granulated sugar
- 4 large eggs
- 1 tsp pure vanilla extract
- 1 c all-purpose
- 1/2 tsp salt
- 1 c mint-flavored chips
- Confectioner's sugar, for dusting
Preparation
Step 1
Preheat the oven to 325º. Coat a 9-by-13-inch baking dish with cooking spray. Line the pan with foil, leaving a 2-inch overhang on 2 sides, then coat the foil with cooking spray.
Heat the chocolate chips and butter in a large saucepan over low heat, stirring, until melted. Remove from the heat; whisk in the brown and granulated sugars and let cool slightly.
Whisk in the eggs, one at a time, then the vanilla. Stir in the flour and salt until just combined. Stir in the mint chips.
Spread the batter in the prepared pan and bake until a toothpick inserted into the center comes out almost clean, about 45 minutes.
Let cool completely in the pan on a rack, then lift out of the pan, using the overhanging foil.
Dust with confectioner's sugar and cut into squares.
