Ingredients

  • 1 lb fettucine pasta
  • 3/4 cup heavy cream
  • 1 lemon, grated & juiced separately
  • 1 cup parsley leaves
  • 1/3 cup granted parmesan cheese
  • 1/4 cup shelled pistachio nuts, lightly toasted
  • 1 large clove garlic, chopped
  • 3 tbsp evoo
  • pepper

Preparation

Step 1

Cook pasta; drain.

While pasta is cooking, warm the cream & lemon peel over medium heat.

In food processor, puree parsley, cheese, nuts & garlic; mix in lemon juice; turn machine back on & blend in evoo. Place pesto in bowl; season w/salt & pepper; stir in hot cream mixture; add pasta & toss.
