Ingredients
- 1 1/2 - 2 pounds thin chicken breast (i.e. Nature's Promise individually wrapped portions), cubed and then sprinkled with olive oil
- 1 cup seasoned panko bread crumbs
- 1/2 cup flour (or House-Autry Chicken Breader) with 1 tsp. Mrs Dash, 1 tsp. paprika, and Salt & Pepper
- 2 eggs beaten lightly
- olive oil
- 10 bamboo skewers (soaked in water for 30 minutes)
Preparation
Step 1
Preheat oven to 400 degrees. Line glass oblong baking dish with parchment paper and evenly spread oil. Put dish in oven as it's heating up.
Thread chicken on skewers
Dip in seasoned flour to coat.
Dip into beaten egg.
Then dip into seasoned panko bread crumbs.
Bake 9 minutes EACH side- 18 minutes total.. Then let rest uncovered, 5 to 10 minutes to crisp.
Serve with dipping sauces: honey mustard, wing, bbq, etc.
Side note: New Parchment paper if multiple batches otherwise don't need the paper. Glass dish only with the oil.
