Parslied Potatoes/ Recipe Card

Ingredients

  • 1 1/2 lbs Red Potatoes
  • 1 T. Vegetable Oil
  • 1 Onion (chopped)
  • 1 sm clove of Garlic
  • 1 Cup Chicken Broth
  • 1 Cup (chopped) fresh Parsley
  • 1/2 tsp Pepper

Preparation

Step 1

1. Peel a strip of skin off of the potatoes.
2. Add oil to large skillet. Add onion and garlic and simmer for 5 mins. Add broth and 3/4 Cup (fresh) Parsley and mix well. Bring to a boil.
3. Place potatoes in a single layer in pan. Return to a boil. Simmer covered for 10 mins or until tender.
4. Remove potatoes. Add pepper to skillet and stir. Pour sauce over potatoes and sprinkle with remaining parsley.
