Chili Cheese Chicken

Ingredients

  • HINT:
  • 2 T EVOO
  • 1/2 t chili powder
  • 1/2 t ground cumin
  • 1/4 t cayenne pepper
  • 1/2 t garlic powder
  • 1/2 t chopped cilantro
  • 1/4 t salt
  • 1/4 t black pepper
  • 4 skinless boneless chicken breast halves, rinsed and patted dry
  • 2 T finely chopped red onion
  • 1 medium tomato, seeded and diced
  • 1/2 medium green bell pepper, cut into strips
  • 1 c shredded Cheddar cheese
  • May substitute 1 can "mexican style" diced tomatoes for tomato
  • May substitute a 4oz can ortega green chilis for bell pepper

Preparation

Step 1

Combine olive oil, spices, cilantro, salt and black pepper in a zip-lock plastic bag and mix well.
Marinate chicken in bag. Be sure to coat evenly. Let stand 15 minutes.

Preheat oven to 400F. Line a baking sheet with foil and arrange chicken on the sheet. Top with onion, tomatoe and peppers.
Bake, uncovered, 20 minutes until chicken is no longer pink in the center. Remove from ove, sprinkle evenly with cheese and bake 3 minutes more or until cheese melts.
Transfer to a serving platter. Drizzle pan drippings over all.
Serve over pasta or couscous if desired.
