Ingredients
- Cake:
- 1 cup butter
- 6 ounces cream cheese
- 6 eggs
- 2 cups sugar
- 1 teaspoon vanilla extract
- 2 1/2 cup flour (cake or all purpose)
- 1/4 cup coconut milk or cream of coconut (optional)
- Can use 1/2 teaspoon vanilla and 1/2 teaspoon coconut extract
- Frosting:
- 1/4 cup butter, softened
- 4 ounce cream cheese, softened
- 1/2 teaspoon vanilla or coconut extract
- 1 1/2 cup confectioners sugar
- 1/2 cup coconut for toasting to sprinkle on top
- This can be doubled
- Note: Add a few tablespoons milk, cream or coconut milk to make frosting thinner.
Preparation
Step 1
Cake:
Preheat oven to 350 degrees.
Prepare 9 X 13 baking pan.
Cream butter, cream cheese and sugar.
Beat in eggs (1 at a time), vanilla and then flour.
Spread batter into pan.
Bake for 35 to 40 minutes, until toothpick comes out clean.
Remove from oven and allow to cool.
When cake cools it will fall and that is normal. It will be the thickness of the sheet cake.
Frosting:
Beat together butter, cheese, vanilla then add sugar.
Mix until well blended.
Toast the coconut. Spray skillet and keep tossing until brown.
Frost cake and top with coconut.
