Chicken Coconut Soup with Ginger, Lime, and Cilantro

Ingredients

  • 3 leftover chicken thighs or 2 cups of cooked chicken
  • 4 cups chicken stock 1 can coconut milk
  • 1 tbl fresh ginger, cut into thin slices or minced
  • 2 carrots
  • 1/2 an onion
  • 2 cloves garlic
  • 1 small package mushrooms
  • 1/4 cup cilantro
  • 1 lime
  • 1 tbl fish sauce (leave out if you don't have it)
  • Salt

Preparation

Step 1

Add thinly sliced carrots, onions & garlic to large pot with 2 tbls butter. Saute on medium until they start to get tender. Add mushrooms and ginger. Cook until mushrooms are soft, about 5 minutes. Add chicken stock, coconut milk, cooked chicken & fish sauce. Let flavors combine for a few minutes. Before serving squeeze in the juice of 1 lime, cilantro, salt to taste. Garnish with more fresh cilantro.
