Ingredients
- 1/2 Cup butter-flavored shortening (or regular shortening or butter)
- 1/2 Cup sugar
- 1/2 Cup packed brown sugar
- 1 egg
- 1 TB. water
- 1 tsp. PURE VANILLA EXTRACT
- 1 Cup flour
- 1 Cup quick-cooking oats (old-fashioned oats work, too)
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 Cups semi-sweet chocolate chips
- 1/2 Cup dried cranberries
- 1/2 Cup chopped walnuts
- 1/2 Cup toffee bits (sold by the chocolate chips)
Preparation
Step 1
Preheat oven to 375°. Cream together the shortening and sugars. Add the egg, water and VANILLA and mix well. Gradually add the flour, oats, baking soda and salt. Mix well. Fold in the chocolate chips, cranberries, nuts and toffee. Drop by the tablespoon on lightly greased cookie sheets. Bake at 375° for 8-10 minutes or until lightly browned around the edges. Remove from oven and let cool for 5 minutes. Transfer to wire racks to finish cooling.
Cooks Notes:
A tip from Patrice: “To really give these cookies wonderful texture, layer the cooled cookies in an airtight container between layers of waxed paper. Place a slice of bread in the container and seal it tightly. Let sit overnight. In the morning, discard the piece of bread.”
