Supreme Pizza Soup

Ingredients

  • 1 lb sweet Italian sausage, casings removed
  • 1 (6 oz) pkg stick pepperoni, chopped
  • 1 (6 oz) pkg Canadian bacon, chopped
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 (8 oz) pkg baby portobello mushrooms, quartered
  • 1 Tbsp bottled minced garlic
  • 1 (32 oz) carton chicken broth
  • 1 (28 oz) can tomato sauce
  • 2 (14.5 oz) cans fire-roasted diced tomatoes
  • 2 dried bay leaves
  • 1 Tbsp dried Italian seasoning
  • 1/2 tsp crushed red pepper

Preparation

Step 1

In a large Dutch oven, cook sausage, pepperoni, and Canadian bacon over medium heat, stirring frequently, for 10 minutes or until sausage is browned and crumble. Remove and drain sausage mixture, reserving 1 Tbsp drippings in pan.

Add onion and next 3 ingredients; cook over medium heat, stirring frequently, for 8 minutes or until tender.

Stir in broth, and the remaining ingredients, and sausage mixture; bring to a boil.

Reduce heat, and simmer 15 minutes. Discard bay leaves, and serve.
