Mozzarella-Stuffed Chicken Parm Meatballs

Ingredients

  • 1 lb ground chicken
  • 1/4 c onion
  • 1/4 c parm
  • 1/2 c panko
  • 1/2 c parsley
  • 1 tsp pepper
  • 1 tsp salt
  • 1/2 tsp fennel
  • clove minced garlic
  • 1 t lemon zest
  • 1 egg
  • mozzarella cheese cut into large cubes
  • flour for coating
  • egg wash
  • panko for coating

Preparation

Step 1

1) mix ingredients from chicken to egg in large bowl

2) roll meatballs around a cube of cheese

3) roll in flour, put in egg wash, roll in panko

4) fry in olive oil til golden then bake 15 minutes at 400

5) serve topped with marinara sauce ..i prefer homemade
