Turkey-Stuffed Bell Peppers

Ingredients

  • 5 Medium green peppers
  • 1 large onion, chopped
  • 2 tsp olive oil
  • 1 1/4 lb ground turkey
  • 2 tsp cumin
  • 1 tsp Italian seasoning
  • 1 garlic clove minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 package shredded cheddar soy cheese
  • 2 medium tomatoes finely chopped
  • 1 1/2 c bread crumbs
  • 1/4 tsp paprika

Preparation

Step 1

1. Cut peppers in half length wise and discard seeds. In a large kettle cook in boiling water for 3-5 min, Drain and rinse in cold water; Set aside

2. In a large skillet, saute onion in oil until tender. Add turkey, cumin, Italian seasoning, garlic, salt, and pepper, cool and stir over medium heat until meat is no longer pink

3. Transfer to a large bowl, stir in cheese, tomatoes and bread crumbs. Spoon into pepper haves. Place in a 15x10x1 baking pan coated with cooking spray. Sprinkle with Paprika.

4. Bake uncovered at 325 degrees for 20-25 minutes or until heated through and peppers are tneder
