HAM - Slow Cooker Smoked Ham Congee

Congee is a savoury rice porridge that can be enjoyed any time of day. Smoked ham hock adds a unique depth of flavour to this Asian staple. Look for it near the cured meat section of your grocery store.To serve, place individual bowls of garnishes, such as sodium-reduced soy sauce, sesame oil, salted Virginai peanuts, sliced green onions, chopped cilantro, and sliced hot chiles, at the table and let everyone dress their own bowl to suit their tastes

Ingredients
- 2 cups (500 mL) long-grain white rice, rinsed and drained
- 1 piece (2 inches/5 cm) fresh ginger, minced
- 4 cloves garlic, minced
- 1-1/4 tsp (6 mL) salt
- 1 tsp (5 mL) pepper
- 1 large smoked ham hock, (about 850 g)
Preparation
Step 1
In slow cooker, stir together rice, ginger, garlic, salt, pepper and 9 cups water; arrange ham over top. Cover and cook on low until ham is tender and rice is consistency of porridge, about 8 hours.
Transfer ham to cutting board; let cool slightly. Remove and discard skin, bone and fat. Using 2 forks, shred or pull apart meat into chunks; stir into slow cooker. Adjust consistency of mixture with additional water, if needed.
