White Chocolate Chip Cake

Ingredients

  • 2 1/4 c. flour or 2 1/2 c. cake flour
  • 1 2/3 c. sugar
  • 2/3 c. shortening
  • 1 1/4 c. milk
  • 3 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 5 large egg whites
  • 1 c. mini semi sweet chocolate chips

Preparation

Step 1

Preheat oven to 350 degrees. Grease cake pans in preparation.

Take 1/4 c. or 1/2 c. (in case of cake flour) of flour and set aside in a bowl. In another large bowl, mix all ingredients together except the egg whites, and chocolate chips.

Beat in egg whites, scraping the bowl and mixing well but careful not to over beat. Set aside.

Pour the chocolate chips in the reserved bowl of flour. Toss to coat, careful to cover all the chips well with flour. Add to the batter and fold in until all is mixed.

Pour into desired cake pans.

For cupcakes bake for 23 minutes. For 13x9 cake, 40-45 minutes. For 8inch pans, 23 minutes.

Remove and cool cakes when toothpick comes out clean to ensure the middle is baked through.

Frost with desired frosting.
