Crock Pot Mushroom-Barley Soup

Ingredients

  • 2 cups beef broth
  • 8 cups chicken stock
  • 1/2 cup baby carrots, cut into rounds
  • 2 stalks celery, thinly sliced
  • 10 ounces white mushrooms, sliced
  • 8 ounces crimini mushrooms, sliced
  • 1/8 cup dried porcini mushrooms
  • 2 tbsp. sherry
  • 1 tsp. dried minced onion
  • 1 tsp. fine sea salt
  • 1/4 tsp. dried thyme
  • 3/4 cup barley, raw

Preparation

Step 1

1. Place the beef broth, chicken
stock, carrots, celery, mushrooms, sherry, minced onion, salt, and thyme into the crock pot. Stir to mix all ingredients

2. Add the barley.

3. Cover and set on high for 5-6 hours.
