Hot dog zuchinni resish

Ingredients

  • 2 cups distilled white vinegar
  • 2 cups sugar
  • 4 1/2 teaspoons salt
  • 1/2 teaspoon turmeric
  • 1 1/2 teaspoon freshly ground pepper
  • 1 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon ground cloves
  • 9 cups finely chopped zucchini
  • 4 small onions, finely chopped
  • 2 apples, peeled and finely chopped
  • 2 green tomatoes, finely chopped
  • 1/2 large red bell pepper

Preparation

Step 1

In a large nonreactive kettle, combine vinegar, sugar, turmeric, salt, pepper, cinnamon and cloves.
Bring to a boil.
Add zucchini, onions, apples and green tomatoes.
Simmer uncovered, stirring frequently until thick (about 30 minutes)
Pack the relish into 4 clean, hot 1 pint jars, leaving 1/2 inch of headroom.
Using plastic or wooden spatula, remove air bubbles.
Wipe the rim with a clean cloth and seal.
Process in a boiling water bath for 10 minutes at altitude up to 1,000 feet, 15 minutes at 1,001 to 6000 feet and 20 minutes over 6,000 feet.
Let cool undisturbed for 12 hours.
Store in a cool, dry place.
Allow 6 weeks for the full flavors to develop.
