Potatoes Mashed Olive Oil

Ingredients

  • 2 pounds red potatoes, cut into quarters
  • 4 garlic cloves
  • 1 teaspoon salt
  • 1/4 cup finely shredded Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons milk (or broth)
  • Salt and ground black pepper, to taste

Preparation

Step 1

In a large pot, combine potatoes, garlic and 1 teaspoon salt. Add enough water to cover the potatoes. Cover and bring to a boil. Lower heat to a simmer and cook for 10 to 15 minutes or until potatoes are fork tender. Drain and then transfer potatoes and garlic to a bowl.
Add cheese, oil and milk to potatoes and then combine and mash the potatoes with a potato masher. Season with salt and pepper to taste.
