Eileen Dempster's pumpkin pie

Ingredients

  • 1.5 C pumpkin fresh baked or canned
  • 1 C dark brown sugar
  • 2 eggs
  • 1 t cinnamon
  • 1.25 C milk
  • 1/2 t ground ginger
  • 1 t all spice
  • dash nutmeg
  • 1 t salt

Preparation

Step 1

Preheat oven to 450

Combine all ingredients until well incorporated and turn into a pie shell.

Bake for 15 minutes at 450, next 25 minutes at 375 and next 15 to 25 minutes at 325. Do not let the custard boil or it will break. Pie is done when a knife inserted comes out clean.
