Ingredients
- 2 tablespoons red wine vinegar
- 1 tablespoon olive oil
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 1/2 cups drained canned black-eyed peas rinsed
- 3/4 cup diced celery
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red bell pepper
- 1/4 cup diced green bell pepper
- 1/4 cup diced red onion
- Cilantro sprigs (optional)
Preparation
Step 1
Combine first 4 ingredients in a medium bowl; stir well. Add black-eyed peas and next 5 ingredients (peas through onion); stir well. Cover and chill at least 1 hour. Stir before serving. Garnish with cilantro sprigs, if desired.
Serving Size: 1 cup
