Soba Noodles with Peanut Sauce

  • 3/4 cup smooth peanut butter
  • 2 teaspoons sesame oil
  • 3 tablespoons soy sauce
  • 1/4 cup rice vinegar
  • 1/3 cup water
  • Juice of 1 lime
  • 1 tablespoon agave
  • 2 teaspoons minced ginger
  • 2 garlic cloves, minced
  • 1 teaspoon Sriracha
  • Salt, to taste
  • Noodles
  • 2 bundles soba noodles
  • 2 cups trimmed snap peas
  • 1 bunch scallions, thinly sliced
  • 2 tablespoons white sesame seeds
  • 1 tablespoon black sesame seeds
  • 3 tablespoons chopped fresh cilantro

Preparation

Step 1

1. In a blender or food processor, combine the ingredients for the peanut sauce and process until smooth. If the sauce is too thick, add more water 1 tablespoon at a time. Set aside.

2. Bring a large pot of salted water to a rolling boil over medium-high heat. Add the soba noodles and cook until tender, 5 to 6 minutes. Add the snap peas and cook 30 seconds more. Drain, and cool completely.

3. In a large bowl, toss the cooled noodles and peas with the peanut sauce. Add the scallions, sesame seeds and cilantro. Store refrigerated in an airtight container until ready to eat. Serve chilled.
