- 3 pounds apples peeled, cored and chopped
- Juice of a lemon
- 1/4 cup brown sugar
- Cinnamon stick
- Pie Crust:
- Unbaked rolled pie crust
- 1/4 cup sugar
- 1 1/2 teaspoons cinnamon
- 1 egg
- 1 tablespoon water
- Ice Cream:
- Your favorite vanilla ice cream

For the apple topping, place apples, brown sugar, lemon juice and cinnamon stick in slow cooker. Cook on high for 8 hours. Alternately, cook in a covered pot on the stove over medium-low or low heat for about 45 minutes.
Mash with a fork or whisk to make a thick, chunky sauce.
For the pie crust, heat oven to 375 degrees and grease a baking sheet. Unroll the pie crust on a slightly floured surface. Use a small cookie cutter to cut out pieces of pie crust. Place on greased baking sheet. Mix egg and water to make an egg wash, and brush it on the pie crust. Mix sugar and cinnamon in a small bowl and sprinkle it on the crust. Bake until golden brown, about 10 minutes.
To assemble, scoop ice cream into a bowl. Spoon some apple topping over the ice cream and garnish with a piece of pie crust.
