Ingredients

  • 1 cup 1% low-fat cottage cheese
  • 1 cup vanilla low-fat yogurt
  • 1/2 cup packed brown sugar
  • 1/2 cup tub-style light cream cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pepper
  • 1/2 teaspoon vanilla extract
  • 2 large eggs lightly beaten
  • 2 large egg whites lightly beaten
  • 4 cups cooked medium egg noodles (about 8 ounces uncooked)
  • Cooking spray

Step 1

Preheat oven to 375º. Combine the first 10 ingredients in a large bowl.

Add noodles, and toss gently to coat. Spoon noodle mixture into a 13 × 9-inch baking dish coated with cooking spray. Cover and bake at 375º for 1 hour. Serve warm or at room temperature.
