Cocoa-Crusted Beef Tenderloin

Ingredients

  • 4 beef tenderloin steaks (1 1/2-in. thick and 6 oz. each)
  • 1/2 tsp. salt
  • 1/2 tsp. coarsely ground pepper
  • 3 Tbsp. baking cocoa
  • 3 Tbsp. finely ground coffee

Preparation

Step 1

1. Preheat broiler. Sprinkle steaks with salt and pepper. In a shallow bowl, mix cocoa and coffee. Dip steaks into mixture to coat all sides, shaking off excess.

2. Place steaks on a rack of a broiler pan. Broil 3-4 inches from heat for 9-11 mins on each side or until meat reaches desired doneness.

NOTE: For Medium-rare, 145º; Medium, 160º; Well-done, 170.

Serve with: Carrot Puree, Kale Salad, Browned Butter Roasted Cauliflower.
