Ingredients
- 1 cup halved dried apricots
- 1 cup pitted and quartered dried Medjool dates
- 1/4 cup extra-virgin olive oil
- 1/4 teaspoon fine sea salt
- 1 teaspoon minced preserved lemon
- 3/4 cup parsley leaves
- 1 medium avocado
Preparation
Step 1
In a bowl, combine dried apricots, dried Medjool dates, extra-virgin olive oil, fine sea salt, preserved lemon and parsley leaves. Toss well. Add avocado, gently toss and serve.
