Swedish Meatballs

NOTES: Make 10lb Ground Beef to make 155 meatballs. 75 meatballs for 20-24 people.

Ingredients
- 1 cup fine bread crumbs (3)
- 1 cup milk (3)
- 2 lbs ground beef (10lb)
- 1 cup finely chopped onion (1.5 cups of fine onion. Use salsa maker) Add onion little at a time to make sure don't add too much)
- 2 eggs, beaten (6)
- 1 1/2 tsp salt (4)
- 1/2 tsp pepper (1.5)
- 3/4 tsp nutmeg (2 tsp)
- 1 tsp worcheshire (3)
- 1/2 cup butter (Use enough butter for cooking) I used 3 pans to cook then combine drippings when making gravy)
- 1/4 cup flour (3/4 cup)
- 3 beef bouillon cubes (9)
- 3 cups hot water (9)
- 3 cups half and half (9)
Preparation
Step 1
Soften crumbs in milk. Add beef, onion, eggs, seasoning and mix thoroughly. Shape in balls, one inch in diameter.
Heat butter in large skillet. Brown meatballs in batches, remove from heat. Stir flour into into drippings. Brown slightly.
Dissolve bouillon cubes in hot water. Gradually add to flour mixture. Stir constantly until smooth, add half and half.
Cook over low heat stirring constantly for 3 minutes.
Add meatballs to sauce and simmer 10-15 minutes.
