Ingredients

  • 1-1/2 c. flour
  • 3/4 tsp. cinnamon
  • 3/4 tsp. ground ginger
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 c. unsweetened applesauce
  • 1/4 c. packed brown sugar
  • 1 egg
  • 1/2 c. molasses ( mild tasting, not black strap)
  • 1/2 c. water
  • 9 T. Cool Whip Free

Preparation

Step 1

Preheat oven to 350. Coat a 9″ square pan with nonstick spray. Sift together the first 5 ingredients. Set aside.
Beat applesauce, brown sugar, egg and molasses until smooth and well blended. Gradually add flour mixture, alternately with water. Mix until combined. Pour into prepared pan and bake for 30-35 minutes or until a toothpick inserted near the center comes out clean.

Cool on a wire rack. Serve with Cool Whip. This cake is also good served warm.
