Ingredients

  • 3 cups milk;
  • 1 1/4 cups yellow cornmeal;
  • 3 eggs;
  • 1 tsp. salt;
  • 1 3/4 tsp. baking powder;
  • 1/4 cup melted butter.

Preparation

Step 1

In a large pot over medium heat, bring the milk to a boil and then whisk in the cornmeal in a slow and steady stream.

Once the cornmeal is thickened, remove the pan from the heat.

In a mixer with the paddle attachment, beat the cornmeal on high speed 1 minute. Reduce the speed to medium and beat in the eggs, salt, baking powder and butter. Beat the mixture 10 minutes (this is important).

Line a deep 9-inch cake pan with parchment paper. Spoon the mixture into the pan and even out.

Place into a pre-heated 400 degree oven and bake 25 minutes. DO NOT open the oven door during the baking process.

Remove from the oven and take to the table.

To serve as a desset, top with some butter and drizzle with some pure maple syrup.
