- 1 tablespoon extra virgin olive oil
- a pinch of sea salt, to taste

1. Wash and slice delicata squash into half-moons (you can leave the skin on! it tastes almost like popcorn when its roasted).
2. Preheat oven to 425 degrees.
Make:
1. Arrange squash pieces on a baking sheet, ensure they are in a single layer for browning.
2. Coat in olive oil, salt gently.
3. Roast for 20-35 minutes total, flipping over at least once during the process
