Ham & Cheese Egg Rolls

These were a hit with the boys, though Dalton said it was basically a rolled up omelet. Cole & I loved it. It’s just a simple little breakfast. It’s kind of like making a crepe with an egg. You could also use 1 or 2 cooked sausage links per roll.

Ingredients

  • 4 eggs
  • Shredded cheese
  • 4 to 8 slices deli ham, depending on how big the slices are
  • Salt & pepper

Preparation

Step 1

Whisk one egg in a bowl. Heat a 10” skillet over medium-high heat & lightly coat with cooking spray. Pour the egg into the pan & swirl to coat the pan so the egg is thin. Cook for about a minute, then using a spatula, flip over to cook the other side. Sprinkle shredded cheese, top with ham, then season with salt & pepper. Cook just enough to melt the cheese & heat the ham. Carefully roll up then place on a plate. Repeat with remaining ingredients.
