Ingredients

  • 4 cups (2-inch) cut green beans (about 3/4 pound)
  • 1 teaspoon olive oil
  • 1/2 cup sliced green onions
  • 4 garlic cloves crushed
  • 2 cups plum tomato (about 3/4 pound) seeded and thinly sliced
  • 2 tablespoons chopped fresh basil
  • OR
  • 2 teaspoons dried basil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Step 1

Steam green beans, covered, 5 minutes or until tender. Drain well, and set aside. Heat oil in a large nonstick skillet over medium-high heat. Add onions and garlic; sauté 1 minute. Add green beans; sauté 3 minutes. Add tomato and remaining ingredients; sauté 2 minutes.

Serving Size: 1 cup
