Ingredients

  • Olive oil non stick spray

  • ½

    cup Panko or other dry bread crumbs

  • ¼

    cup ground Parmesan cheese

  • 2

    tbsps. corn meal

  • ½

    tsp. ground hot pepper ( cayenne)

  • 1

    large egg white ( can use whole egg )

  • ½

    tsp. salt

  • 1

    whole checken cut up with skin removed

  • or

  • 1

    large pkg boneless skinless chicken thighs work very well

Directions

1. Heat oven to 425. Spray a broiler pan, or something similar with pan spray. 2.Combine bread crumbs, Parmesan, cornmeal and pepper in a flat dish. Beat eggs and salt in another dish. 3. Dip each piece of chicken in the egg mixture then coat with the crumb mixture, firmly pressing so crumbs adhere. Arrange chicken in prepared pan. Lightly spray with oil. 4. Bake chicken until coating is crisp and golden brown and juices come out clear when poked with fork - about 30minutes
